Why did they add so much to the Hobbit movie?

The quick answer is that The Hobbit Trilogy of movies is based on one short book, The Hobbit. So director Peter Jackson had to heavily pad each movie and much of the plot of each one was made up by him. If he had chosen instead to stick to the original book, it could have brought to the screen in one long movie.
