A propane tank is pressurized so atmospheric air won’t enter it unless it is completely empty and left open. Best to leave them closed, keeps them from rusting. An empty propane tank is less dangerous than an empty gasoline tank but both should be treated with respect.

If the burners are left open and the tank valve is left open, the gas will all escape. Nothing will happen, if the tank is connected to the grill and the tank valve is left turned on, unless one or more of the burner control vales isn’t turned fully off or is leaking.
