It was a ridiculous strategy, what did they think would happen? A better stratergy would of been to hide the Dothraki on each side of the flanks and when the army of the dead charge in to attack the Unsulied, The Dothraki charge in from each side flanking them Or even from round the sides of the castle.
Did the dead kill all the Dothraki?
They didn’t get wiped out at all. After they rode off they switched off their flaming swords, making look like they were wiped out.
Why did the Dothraki charge the White Walkers?
The Dothraki had success charging into adversaries like that in the past because they were charging into living humans who are subject to terror and fear, leading to easier deaths.

The temple of Dosh Khaleen, a holy place, was lit on fire. All the khals inside it burned to death and Daenerys came out of all that, completely unharmed. To the dothraki this displayed God-like strength. Hence, they now follow Daenerys.
