Is the Boruto anime canon to the manga?

Yes, both the Boruto anime and manga are canon since they are written by the same person Ukyō Kodachi and supervised by Masashi Kishimoto.

Is it OK to watch Boruto manga canon only?

Boruto is the main character in this series so its a miss to not experience his character development. The first 24 episodes I’d say were pretty good. After that you should just skip it to manga canon episodes because the fillers/anime canon episodes after that mostly has nothing to do with the manga.
