Is Coruscant ever destroyed?

No. The planet that was blown up at the end of Episode VII was Hosnian Prime, which, at the time, was the capital of the New Republic. They moved there because when people heard “Coruscant” they immediately thought of the Empire and naturally they wanted to distance themselves from it as much as possible.
