Why didnt Saruman fight the Ents?
All his power was bound up in his devices and slaves. Also, Saruman knew that the Ents could not harm Orthanc itself, so it would probably make more sense to hide in the tower than risk harm by coming out and fighting the Ents in person.
Do the Ents help in the war?
Fangorn himself said that the Ents no longer care to be involved in the affairs of men. The only reason they got involved at all is that their newest neighbor was cutting down the forest, when he should have known better. They took care of the neighborhood issue, after much debate.

Could the Dead Men have taken Aragorn to Mordor?

Were the Ents unstoppable?
The Ents were also not unstoppable. A key thing to remember in their destruction of Isengard is that Saruman’s entire army was away at Helm’s Deep. Yes, some of the Ents led Huorns to attack the Orcs besieging Helm’s Deep, but they were helped by (and lent their help to) a large part of the army of Rohan.
