Bilbo simply lasted longer without being corrupted, since he was strong and well-meaning to begin with. Meanwhile, Gollum stole the Ring by murdering his cousin, simply because he wanted it; and he used it for evil, in order to steal things from his family, kill goblins etc; and he had it for 500 years.
