Can an egg be unscrambled?

You can’t unscramble an egg. But you can unboil it. That’s what chemists with University of California, Irvine, and South Australia’s Flinders University managed to do, and their findings were published last week in the journal ChemBioChem. All it took was a chemical solution and a machine that spins at high speeds.

This may sound like a riddle, but thanks to chemistry it’s actually possible. When an egg is boiled, the transparent liquid (albumen) around the yolk turns white. They added urea to liquefy the boiled egg whites, then put them in a vortex device to pull apart the proteins and return them to their original state.

It has often been said that you can’t unscramble an egg. But you might be able to unboil one. When you boil an egg, the heat causes the proteins inside the egg white to tangle and clump together, solidifying it.

It turns out that if you apply enough kinetic energy to that mesh by spinning it in a 5,000 RPM centrifuge, you can literally rip the individual protein strands apart and ball them up back into their original states. Urea acts as a lubricant, which helps protein molecules slip past each other faster.

Applying heat to an uncooked egg, hardens the egg, by vaporising water in the egg and transforming the protein so they lock together in a solid mass instead of their suspended form in the egg. The shell is hardened calcium and is unlikely to melt at the temperatures you would reach.

Cooking an egg is an irreversible change. The cooked egg cannot be turned back into a raw egg. The chemicals that make up the egg have been changed by cooking to make new substances.

When you spin the raw egg, its centre of gravity (or balance point) changes as the fluid inside the egg moves around. This results in a wobbling motion in order to achieve balance. When the hardboiled egg is spun, the solid centre has a fixed centre of gravity, causing it to move at the same time as the shell.

Can you dissolve the eggshell of a raw egg?

If you want to dissolve an eggshell, start by placing an egg in a glass and adding enough vinegar or cola to cover it. Once the egg is submerged, the chemical reaction between the acetic acid in the liquid and the calcium carbonate in the eggshell will cause the shell to dissolve.
