Just like Medival Spain, Dorne is being influenced by a foreign power. House Martell is descended from Nymeria, a Rhoynish warrior queen from Essos who lead her people away from their homeland to escape the Valyrians, who were trying to enslave them.

Why does Dorne have a prince?
Even after Dorne was finally united by marriage, a part of the terms was for them to retain their titles, and the ruling lord/lady of Dorne would be addressed as Prince or Princess. The simple answer is that Dorne is a Principality and not a Kingdom, therefore it is ruled by a Prince.
