What would have happened to Gollum if the ring was destroyed while he was still alive?
If Gollum had survived the destruction of the Ring, he would not have survived long. He was so tied to the Ring that he would start to weaken and die eventually.

Unlike the novel, Gollum’s fall into the Cracks of Doom is caused when Frodo wrestles him off the precipice. In the novel, Frodo doesn’t attempt to attack Gollum; Gollum instead accidentally falls in when he dances with joy at his reclamation of the Ring.

Gandalf may have planned to take Frodo and the others not through the mountains, but to the eagles’ nest, where they could make the rest of the journey by air.

How would Sauron have responded to the Fellowship’s invasion?
While flying in on giant eagles would’ve certainly been quicker than walking, Sauron would’ve seen the Fellowship coming long before their arrival and rallied his full power in response. Power that would’ve undoubtedly been spearheaded by the Nazgûl.
